I wish i wasnt so in debt. Monthly break down: 360 for the car, 420 for loans, 56 for bills(greatful for my roomies), and 180 for rent. 1016.00 per month. More than half of my pay after taxes. This doesnt even include the pay that goes to my car body shop. In oreder to make ends meet ive started to work part time outside of my normal 60 hr wrk week.im so stressed by this. My husband helps when he can. But most of his money goes back into the shop.
One more year and ill almost be debt free, cant wait.

My work
As i step down from the kitchen, id like to go over somethings ive learned. Something will always go wrong no matter what, sohave three other plans ready to go at all times. Be organized,finish in a timely mannor, follow ur leAder even when they are being stupid, dont explode underpressure, just keep your head down, also people will always try to step on you... as my husband says: Im the boss, no!Im the boss. People want to the boss in a kitchen. Truth is most people paid 60,000to go to an art or specialized school. Only towork as as an illegal immigrant pay. Yup 5.50 is starting for an intern... if they pay you, 15 is the most you can hope to make till you hit management. Most of the kitchen staff, are paid 10-12 dollars per hr. Sorry i got side tracked. Every kitchen ive wrked in has illegal immigrants, they are the hardest workers and friendlest workers ive ever met. Theyvve taught me to laugh and sing when shit hits the fan, spanish, how to cook mexican and guatamalin and purvian foods, theyve taught me to trust people again after being raped and abused. I think about the crazy bitch of a kitchen. Its changed me for the better. I am sober, have some self confidence, can work any where, meet my husband here, made so many friends... well met amazing people thatchanged my life, and fucked up soo much food it would feed all the starving children of the world. But kitchen food waste is for another day.
